It didn't make sense to me Geralt, an experienced witcher, started the game not knowing anything about monsters or how to brew any potions. So I started a fresh game (death march difficulty) and used the console to unlock all bestiary entries and alchemy recipes. I only unlocked the recipes not the potions so you will still need to gather ingredients and brew the potions yourself. For me it made the game feel more realistic and not like it was Geralts first day on the job.
